Sweet peas (snow peas), Native to the Orient, from the legume family. The gourmet pea is a variety of green peas that appeared in Europe in the 8th century, but it was not until the 17th century that we really began to serve it regularly. it differs from peas by the absence of parchment, a hard membrane in the pod. The pod and the seeds are eaten at the same time, it is useless to shell the snow peas which thus deserve their other name of "snow peas" or "princess".
As for green beans, cut their ends and remove the wires if there are any. If they are very young and tender, you can leave them raw, in small pieces, they bring a fresh and sweet touch to a salad of raw vegetables. They can also be barely bleached and cooled.
