Made of thermized milk from 100% Canadian cows, this firm, cooked and pressed cheese is ripened in the mass for 3 to 6 months. The wheels weigh an average of 8 kg. Under a slightly moist pink rind, the dark yellow paste is smooth, creamy and melting in the mouth. It gives off aromas of butter and nuts and its taste, both sweet and complex, offers notes of butter, green apple and a nutty finish. Its texture improves with age and its taste develops without bitterness.
