A Provencal specialty, fougasse is a flatbread with oblique holes whose white crumb is flavored with olive oil. Originally, this bread was an unleavened wheat flower pancake that was baked under the ashes in the hearth, whose Latin name focus gave the name focaccia, which then became fouace, fouasse and finally fougasse. Scented with Provence herbs, our fougasse is overflowing with kalamata olives, and that is why its taste is particularly intense.
