Nantes carrots have round ends, a very tender heart and a sweeter taste than their cousins, the traditional carrots.
Their skin is very thin and tasteless, so you don't need to peel them. A simple brushing under running water will do the trick.
They are delicious raw, but they can also be simply frozen and enjoyed as a side dish. To do this, blanch them whole for two minutes in boiling water, then brown them in a large pan with a little butter and brown sugar. A delight!
