The flank steak comes from the sides of the beef (bottom sirloin) and offers a characteristic filamentous texture. The bib was mainly popularized in bistros and has become very popular with consumers. This is a fairly tough meat, however, it becomes tender when properly prepared. We recommend marinating it to gain flavor and tenderness. It is best to serve it pink or medium rare.
