Made from organic raw milk from the herd of Holsteins cows on the family farm, this is a firm, pressed, farmhouse cheese. cooked, washed rind. It is matured for eight months on wooden boards from the farm. Its orange rind presents an aroma of undergrowth and mushroom. Straw yellow in color and dotted with small holes, its firm yet supple body reveals complex flavors of fruit, hazelnut, honey and a rustic woody touch.
